Turkish Rice
Ingredients
1 1/2 cups Rice (soaked in salt water)
4 tbsps Olive oil
2 medium bundle Carrots (diced)
2 tbsps Hazelnuts
2 tbsps Pine nuts
Salt to taste
3 Stock cubes (rushed)
2 tbsps Small black currants
Method
Heat olive oil in a pan. Add carrots and fry for a couple of minutes. Drain and set aside.In same oil add hazelnuts and
pine nuts and fry till lightly browned. Drain and set aside.Drain and add soaked rice to remaining oil in pan and sauté
for about two minutes.Add three cups of water and bring it to a boil. Add salt and crushed stock cubes and mix. Add small
black currants and mix. Add fried nuts and cook till most of water is absorbed.Add fried carrots and mix. Cover and cook
on low heat till done.Serve hot.
